Adam’s journey in food began at the sink, scrubbing pans and washing lettuce as a young kitchen porter. His passion and determination soon carried him into the heart of the kitchen, ultimately leading him to the role of Head Chef at Jamie Oliver’s Fifteen Cornwall. There, cooking with the finest of Cornwall’s produce and leading a dedicated team, Adam’s philosophy was cemented: food should be honest, seasonal, and meant to be shared.
When Fifteen Cornwall closed in 2019, Adam seized the opportunity to forge his own path. He poured his creativity into pasta masterclasses and pop-up supper clubs, bringing people together over handmade dough in bakeries, wine shops, art galleries, and private homes. Each project became a way to connect people through food, celebrating ingredients, seasons, and stories of place.
In 2022, Adam opened his first restaurant, Verbena, a reflection of the values that have guided his career. Built around seasonal, thoughtfully sourced ingredients, Verbena brings Adam’s signature style to life — offering guests not just a meal, but a connection to the food, the stories behind it, and the joy of sharing it.
Adam’s now a freelance chef and is popping up at The Little Prawn in Padstow this winter.
